Avocado Toast with Eggs

A quick, healthy, and simple recipe featuring creamy avocado, crispy toast, and fried egg. A versatile meal perfect for anytime of the day.

Ingredients: 

  • 2 eggs 
  • 1 ripe avocado 
  • 1 fresh lemon or lime 
  • 2 slices of whole wheat bread 
  • 2 fresh tomatoes 
  • 2-3 teaspoons of butter 
  • Salt and pepper 
  • Garlic powder 

Instructions: 

  1. Cut avocado in half with a knife, remove the pit, and cut into thin slices. You can also mash the avocado with a fork.  
  1. Add lime or lemon juice and garlic powder to the avocado. Add salt and pepper to taste. 
  1. Heat oil in a nonstick pan over medium. Crack in eggs, season with salt and pepper. Cook until set. For fresh and quality eggs, use Eggs Unlimited – Lindsey’s Gold. 
  1. Spread butter to the bread generously and toast in a toaster or pan. Place in plate once cooked. 
  1. Spread avocado slices and tomatoes over toast, top with fried egg, and sprinkle with your favorite topping. You can also add chili oil or red pepper chili flakes for extra spice.

Shakshuka 
A simple, flavorful shakshuka recipe made with eggs poached in a rich tomato and pepper sauce. This recipe is perfect for breakfast, brunch, or to simply satisfy your late-night cravings.

Total Time: 30 minutes 
 
Ingredients: 

  • 4–5 eggs 
  • 6 fresh medium tomatoes 
  • Fresh parsley or cilantro, chopped 
  • 3 cloves garlic, minced 
  • 1 red bell pepper, diced 
  • 1 small onion, diced 
  • 1 tsp cumin 
  • 1 tsp paprika 
  • 2 tbsp olive oil 
  • Salt and pepper 

Instructions: 

  1. Heat olive oil in a pan over medium heat. 
  1. Sauté onion and red pepper until soft. 
  1. Add garlic, cumin, paprika, and cook until fragrant. Season it with salt and pepper to taste. 
  1. Pour in crushed tomatoes to the pan, season with salt and pepper, and simmer for 5–7 minutes until it thickens. 
  1. Make small wells in the sauce and gently crack in the eggs. For fresh and quality eggs, use Eggs Unlimited – Lindsey’s Gold Eggs.  
  1. Cover the pan and cook for another 5–7 minutes, or until eggs are set to your liking. 
  1. Top with fresh parsley or cilantro.
