What are brown eggs?

Brown eggs are conventional or specialty eggs produced by certain breeds of hens. New Hampshire, Rhode Island Red, and Plymouth Rock are among the breeds that lay brown eggs. Often, brown egg shells are slightly thicker than white egg shells.

How do brown eggs get their color?

Brown eggs get their color from the breed of the hen and how the hens lay their eggs. This color comes from hemoglobin, a red blood cell component that contains the organic compound protoporphyrin IX. 

When hens that lay brown eggs pass eggs through their oviducts, protoporphyrin IX is added to the shell, resulting in a brown color. Without this color, the egg would be white, which is the color of calcium carbonate, an egg’s base material. Hen breeds that lay white eggs don’t deposit protoporphyrin IX onto the egg during the laying process.

White eggs vs. brown eggs: What’s the difference?

Brown and white eggs only differ in color. There are no other physical or nutritional differences, assuming the hens are fed similar diets. However, brown eggs may be sold at a higher price because the hen breeds that lay them require more feed, increasing production costs.
